  • Full-Time Role | Onsite at Provisions Deli & Creperie

    The Role

    The Crêpe Chef role reports to Mona Farm’s Executive Chef and is responsible for leading the day-to-day operation of the Provisions Deli & Creperie kitchen, with a focus on delivering a high-quality food experiences for our customers. 

    The Crêpe Chef is responsible for overseeing all kitchen operations for Provisions Deli & Creperie, with a focus on designing and delivering a seasonal crêpe menu. This role requires a strong culinary background, creativity, leadership skills, and a deep understanding of traditional and modern crêpe-making techniques.

    This is a full-time role located at Provisions Deli & Creperie in Braidwood, NSW.

    Role Accountabilities

    • Lead the day-to-day kitchen operations for Provisions Deli & Creperie, and oversee food preparation, cooking and cleaning processes.

    • Plan and design seasonal updates to the Provisions Deli & Creperie menus in consultation with the Executive Chef.

    • Direct kitchen operations, including training and managing more junior kitchen staff members to optimise performance, and resolve issues as they arise.

    • Develop and maintain food related procedures, and supervise food preparation and associated culinary processes, ensuring the correct procedures are following to maintain quality and safety.

    • Ensure compliance with all relevant food hygiene and safety regulations, including ensuring all kitchen staff hold the required Food Safety Certification.

    • Maintain an accurate food inventory using an agreed format, and manage food supply orders to ensure stock levels are adequately maintained to prevent wastage.

    • Maintain budgets and expenditure tracking for the Mona Farm kitchen, ensuring best practices are implemented to manage labour and food expenses.

    • Produce high quality food experiences for guests to maximise customer satisfaction, and continue to improve Provisions Deli & Creperie’s culinary reputation.

    • Regularly review our culinary offering and conduct competitive research to ensure Provisions Deli & Creperie’s food services and menus remains on trend.

    • Be an active member of the kitchen team during the preparation, service and pack down of the kitchen facilities.

    • Maintain a positive and professional approach with co-workers and customers, helping to reinforce Provisions Deli & Creperie’s reputation for exceptional service.

    • Ensure quality, efficiency and creativity are maintained as the Provisions Deli & Creperie business grows, and collaborate with the Mona Farm Management Team to identify new ways to improve business performance.

    • Seek feedback on food quality, presentation and service levels regularly, and identify opportunities to continuously improve our food offering.

    • Contribute to a positive work environment and display exceptional leadership by consistently demonstrating the Mona Farm values, and participating in staff meetings and activities with a positive attitude.

    • Promote Provisions Deli & Creperie through the community and your personal networks to uphold Mona Farm’s reputation in the industry.

  • Full-Time or Part-Time Role | Onsite at Provisions Deli & Creperie

    The Role

    The Crêpe Chef Apprentice role reports to the Provisions Crêpe Chef and will with the Provisions Deli & Crêperie Kitchen team to learn the necessary techniques to create high-quality crêpes. This role is ideal for someone passionate about culinary arts, particularly in the field of crêpe making, and looking to develop their skills in a Different kitchen environment.

    This is a full-time or part-time role located at Provisions Deli & Crêperie in Braidwood, NSW.

    Role Accountabilities

    • Assist the Crêpe Chef in the preparation and cooking of crêpes during service.

    • Learn and master traditional and modern crêpe-making techniques.

    • Participate in training to improve culinary skills.

    • Prepare ingredients and mise en place for crêpe making.

    • Follow recipes and instructions to create a variety of crêpes.

    • Ensure all food items are prepared and presented to the highest standards.

    • Assist in maintaining a clean, organised, and safe kitchen environment.

    • Support the kitchen team in various tasks, including cleaning and organising equipment and workstations.

    • Help with inventory management and stock rotation.

    • Monitor the quality and consistency of crêpes being prepared.

    • Assist in conducting regular tastings and quality checks.

    • Follow food safety and hygiene standards at all times.

    • Occasionally assist in front-of-house duties, such as taking orders or explaining menu items to customers.

    •  Gather customer feedback and relay it to the Head Chef and management.

    • Perform other duties as and when required by Management.

  • Full-Time Role | Onsite at Mona Farm and its subsidiaries

    Salary Range: $70,000 - $80,000 excluding superannuation (sponsorship opportunities available for the right candidate).

    The Role

    Reporting to Mona Farm’s Hospitality Director, this role has been developed to assist in leadership and management of Mona Farm’s growing Food & Beverage operation in collaboration with the Hospitality Director and Kitchen teams.

    The role accountabilities are designed to realise the business owner’s vision of becoming a world class destination, maximise profitability and growth and should result in outstanding guest satisfaction across Mona Farm, Cedar Lodge Motel, Provisions, The Albion and any other Mona Farm Entities.

    Role Accountabilities

    - Assist with and oversee the day to day Food & Beverage operations ensuring efficient, friendly and professional food and beverage service is provided to all guests

    - Coordinate daily Front of the House and Back of the House Events operations across Mona Farm, Cedar Lodge, The Albion and Provisions Deli & Creperie

    - Be an active member of the events, restaurant and cafe front of house wait staff teams.

    - Deliver food related activities to compliment guest stays (workshops, classes, food related tours etc)

    - Delivery of front of house service for in house dining experiences – prepared meals and in house chef catered lunches and dinners.

    - Delivery of front of house service for weddings, private and corporate events in the restaurant and guest houses

    - Set up and pack down of restaurant for functions as per Event brief.

    - Onsite barista duties, coffee preparation, coffee training

    - Ensure that quality, innovation and creativity is maintained as the operation grows.

    - Engage with local community and offer training to upskill local labour.

    - Maintain a fully stocked inventory and order food and beverage supplies as needed.

    - Maintain key relationships with suppliers (wine and spirits)

    - Ensure best practices are in place to reduce labour and COGS.

    - Create forecasted costed rosters.

    - Create weekly staff rosters and manage staffing requirements.

    - Ensuring that Mona Farm adheres to WHS and other regulatory policies.

    - Deliver superior service and maximise customer satisfaction.

    - Respond efficiently and accurately to customer complaints.

    - Regularly review product quality and research new vendors in collaboration with the Senior Management team.

    - Ensure compliance with sanitation and safety regulations.

    - Ensure Mona Farm’s good image is upheld and suggest ways to improve it.

    - Monitor operational costs and identify measures to cut waste and better improve sustainability.

    - Perform administrative duties directly related to the role.

    - Maintain a positive and professional approach with co-workers and customers.

  • Full-Time Role | Onsite at Mona Farm in Braidwood NSW

    The Role

    The Chef de Partie role reports to the Executive Chef, Mona Farm and is responsible for supporting the day-to-day operation of the Mona Farm kitchen team, with a focus on delivering exceptional culinary experiences.

    The successful candidate will have a positive and hands-on attitude, willingness to learn and have a genuine interest in hospitality. They will join a dynamic team that is passionate and committed to delivering exceptional experiences for our guests. 

    About You

    • Have previous experience working in a fast-paced kitchen 

    • Experience in the smooth running of food service in an a la carte and/or function environment

    • Have excellent communication skills

    • Have team spirit and positive demeanour

    • Be flexible with work hours and available to work weekends 

    • Demonstrate a keen interest in food and techniques

    • Immaculate presentation and grooming

    • Have a genuine commitment to the customer experience

    • Be in a position to commute or relocate to Braidwood NSW

    • Ensure that all Mona Farm standards and procedures are followed, as set out by Executive Chef

    • Ensure that all staff work in accordance with our occupational, health and safety guidelines as
      stated in our WHS manual

    • Ensure that all aspects of our Food Safety Plan are followed, ensuring that all records and
      procedures are up to date and accurate at all times

    • Supervise chefs so that the kitchen operates professionally and efficiently at all times

    • Maintain an environment and culture that facilitates learning and creativity

    • Maintain a harmonious team that communicates well with all other members of the organization

    • Inform Executive Chef of malfunctioning or broken equipment

    • Ensure that all food items are properly stored to prevent spoilage

    • General food production and presentation for accommodation

    • Assisting the Executive Chef to expand the product range and guest offerings

    • In-house event catering for events from 8 – 60 guests (private, corporate, weddings)

    • Resolve customer problems and concerns personally

    • Provide support to junior kitchen employees with various tasks including line cooking, food
      preparation, and dish plating.

    • Collaborate on menu design

    • Run your section of the kitchen effectively, ensuring service and events are smooth

    • Ensure all standards are kept in the Executive Chef’s absence

  • Full-Time Role | Onsite at Mona Farm in Braidwood NSW

    The Role

    The Head Gardener role reports to the General Manager and is responsible for overseeing all horticulture and landscaping responsibilities, with a focus on maintaining the exceptional standards of the estate and other associated properties.

    This role is full time, and located onsite at Mona Farm.

    About You

    • Formal horticultural qualification (highly desirable)

    • Minimum 3 years’ experience in an equivalent role

    • Be in a position to relocate to Braidwood NSW

    • Must be eligible to work in Australia or obtain the relevant working visa

    • Strong written and verbal communication skills, and attention to detail.

    Duties include (but are not limited to)

    • Manage daily horticultural tasks including lawn care, hedge trimming, planting, pruning, feeding, weeding, and basic plant healthcare across Mona Farm, Cedar Lodge Motel, Mona Farm Guest Houses (onsite and offsite), Provisions Deli & Creperie and The Albion.

    • Collaborate with horticultural contractors to generate innovative ideas and oversee the upkeep of Mona Farm gardens.

    • Lead the Garden team, ensuring efficiency, performance, and effective task management.

    • Actively contribute as a hands-on member of the Garden team.

    • Prepare the property for weddings, events, and guest accommodations.

    • Manage and maintain the irrigation system and composting processes.

    • Maintain a productive kitchen garden in collaboration with the Executive Chef.

    • Oversee propagation, seed raising, and chemical management.

    • Ensure proper maintenance of gardening equipment and supplies inventory.

    • Establish and uphold departmental standards, conducting regular reviews for compliance.

    • Optimise team operations to enhance guest, employee, and owner satisfaction.

    • Adhere to WHS and regulatory policies, ensuring best practices for safety, sanitation, and cost management.

    • Ensure timely completion of work orders, special projects, and administrative tasks.

    • Provide superior service, and maintain a professional approach with colleagues.

    • Maintain budgets, track expenditures, and support senior management with operational reviews.

    • Plan, schedule, and oversee year-round garden maintenance.

    • Develop and document a comprehensive annual maintenance schedule.

    • Manage weekly staff rosters and staffing needs, including recruitment and performance management.

    • Engage with the local community, and uphold Mona Farm’s image and suggest improvements where needed.

    • Identify risks and issues and assist in developing mitigation strategies.

    • Provide guided tours of the gardens as required.
