  • Full-Time Role | Onsite at Mona Farm and its subsidiaries

    Salary Range: $70,000 - $80,000 excluding superannuation (sponsorship opportunities available for the right candidate).

    The Role

    Reporting to Mona Farm’s Hospitality Director, this role has been developed to assist in leadership and management of Mona Farm’s growing Food & Beverage operation in collaboration with the Hospitality Director and Kitchen teams.

    The role accountabilities are designed to realise the business owner’s vision of becoming a world class destination, maximise profitability and growth and should result in outstanding guest satisfaction across Mona Farm, Cedar Lodge Motel, Provisions, The Albion and any other Mona Farm Entities.

    Role Accountabilities

    • Assist with and oversee the day to day Food & Beverage operations ensuring efficient, friendly and professional food and beverage service is provided to all guests

    • Coordinate daily Front of the House and Back of the House Events operations across Mona Farm, Cedar Lodge, The Albion and Provisions Deli & Creperie

    • Be an active member of the events, restaurant and cafe front of house wait staff teams.

    • Deliver food related activities to compliment guest stays (workshops, classes, food related tours etc)

    • Delivery of front of house service for in house dining experiences – prepared meals and in house chef catered lunches and dinners.

    • Delivery of front of house service for weddings, private and corporate events in the restaurant and guest houses

    • Set up and pack down of restaurant for functions as per Event brief.

    • Onsite barista duties, coffee preparation, coffee training

    • Ensure that quality, innovation and creativity is maintained as the operation grows.

    • Engage with local community and offer training to upskill local labour.

    • Maintain a fully stocked inventory and order food and beverage supplies as needed.

    • Maintain key relationships with suppliers (wine and spirits)

    • Ensure best practices are in place to reduce labour and COGS.

    • Create forecasted costed rosters.

    • Create weekly staff rosters and manage staffing requirements.

    • Ensuring that Mona Farm adheres to WHS and other regulatory policies.

    • Deliver superior service and maximise customer satisfaction.

    • Respond efficiently and accurately to customer complaints.

    • Regularly review product quality and research new vendors in collaboration with the Senior Management team.

    • Ensure compliance with sanitation and safety regulations.

    • Ensure Mona Farm’s good image is upheld and suggest ways to improve it.

    • Monitor operational costs and identify measures to cut waste and better improve sustainability.

    • Perform administrative duties directly related to the role.

    • Maintain a positive and professional approach with co-workers and customers.

    • Display exceptional leadership by providing a positive work environment.

    • Interact and actively engage with guests to obtain feedback on their experience.

    • Train new and current employees on proper customer service practices.

    • Implement policies and protocols that will maintain future operations.

    • Maintain budgets and expenditure tracking reports.

    • Other responsibilities as and when required by Mona Farm

    • End of shift/event reporting

    • Ensuring that Mona Farm/ Provisions /The Albion adheres to WHS and other regulatory policies

    • Budget management (subject to approval of General Manager)

    • Identify risk, issues, and help document and construct mitigation strategies.

    • Recruit Staff members when required.

    • Rostering and timesheet approval for Department.

    • Review processes regularly to ensure improvements are always being made.

    • Other responsibilities as and when required by Mona Farm.

  • Full-Time Role | Onsite at Provisions Cafe

    Salary: $70,000 excluding superannuation

    The Role

    Reporting to Mona Farm’s Cafe Operations Manager, this role has been developed to oversee the day to day operations of Provisions Cafe in collaboration with the Hospitality Director and Kitchen teams.

    The role accountabilities are designed to realise the business owner’s vision of becoming a world class destination, maximise profitability and growth and should result in outstanding customer satisfaction at Provisions Cafe.

    Role Accountabilities

    • Collaborate with the Cafe Operations Manager to coordinate daily Front of the House and Back of the House restaurant operations.

    • Deliver superior service and maximise customer satisfaction through every interaction.

    • Respond efficiently and appropriately to customer complaints.

    • Regularly review product quality and research new vendors in collaboration with the Cafe Operations Manager, Executive Chef and Crepe Chef.

    • Ensure compliance with food safety and WH&S regulations.

    • Collaborate with the Cafe Operations Manager to ensure the cafe’s positive image is upheld and suggest ways to improve it.

    • Assist the Cafe Operations Manager to monitor operational costs and identify measures to cut waste.

    • Create detailed reports on weekly, monthly and annual revenues and expenses for the Cafe Operations Manager, Hospitality Director and General Manager.

    • Promote the brand in the local community through word-of-mouth and cafe events/promotions.

    • Work with Marketing team to produce and implement ways to reach a broader audience (e.g. discounts and social media ads).

    • Train new and current employees on proper customer service practices.

    • Implement policies and protocols that will maintain future cafe operations.

    • Collaborate with the Cafe Operations Manager to maintain budgets and expenditure tracking reports.

    • Work with the Cafe Operations Manager, Executive Chef and Crepe Chef to manage supplies and ordering to ensure stock levels are adequately maintained to prevent wastage.

    • Perform end of shift till reporting.

    • Other responsibilities as and when required by Mona Farm.

Here’s our conversation with Sarah Simmons.

With more than 10 years’ experience working across 5-star hotels, our Hospitality Director, Michael De Wet, has been brought on to take Mona Farm to new heights. With an impressive client list of influential figures, from Lady Gaga to the legendary Nelson Mandela, Michael is well accustomed to delivering service at an exceptionally high-level. In 2023, before joining Mona Farm, he took the helm as the Venue Manager of The Tearoom, housed within Sydney’s iconic Queen Victoria Building. It was in this role where he honed in on weddings – welcoming north of 1500 guests each week.

In 2013, Tristan journeyed from England to Sydney where he intended to spend a year exploring the city. It was only three weeks before he was picked up by renowned restaurant, Rockpool 1989, where he worked under Head Chef, Phil Wood & high-profile restaurateur, Neil Perry. In the years that followed, he worked at 3 hatted restaurant Sepia, 2 hatted restaurant Cafe Paci, 2 hatted restaurant EST & 2 hatted restaurant Saint Peter.
